
Ingredients
- 240g black beans, drained
- 140g sweetcorn, drained
- 2 large tomatoes
- 1/2 red onion
- 1 avocado
- 1 lime
- 1/2 cup wholewheat rice
- 1 tbsp hot sauce
- 1 tsp turmeric
- 1 tsp chilli flakes
- 1 tsp paprika
- Handful of coriander
Method
- Add the turmeric to the rice and bring to the boil. Simmer for 20mins
- Whilst the rice cooks, you can prepare the salsa by chopping up the onions and tomatoes . Place the chopped tomatoes, onion and chilli flakes in a bowl and add lime juice. Stir well and leave to the side
- Prepare the black beans by heating the beans over a low heat and adding the hot sauce and paprika. Stir well to ensure the beans are fully covered and remove from the heat.
- Mash the avocado in a bowl with the remaining lime juice and coriander
- Drain the rice and build your bowl!
