Black Bean Burrito Bowl

Ingredients

  • 240g black beans, drained
  • 140g sweetcorn, drained
  • 2 large tomatoes
  • 1/2 red onion
  • 1 avocado
  • 1 lime
  • 1/2 cup wholewheat rice
  • 1 tbsp hot sauce
  • 1 tsp turmeric
  • 1 tsp chilli flakes
  • 1 tsp paprika
  • Handful of coriander

Method

  1. Add the turmeric to the rice and bring to the boil. Simmer for 20mins
  2. Whilst the rice cooks, you can prepare the salsa by chopping up the onions and tomatoes . Place the chopped tomatoes, onion and chilli flakes in a bowl and add lime juice. Stir well and leave to the side
  3. Prepare the black beans by heating the beans over a low heat and adding the hot sauce and paprika. Stir well to ensure the beans are fully covered and remove from the heat.
  4. Mash the avocado in a bowl with the remaining lime juice and coriander
  5. Drain the rice and build your bowl!
