Creamy Avocado Spaghetti

Ingredients

  • Wholewheat Spaghetti
  • 1 cube of vegetable stock
  • 1 onion, chopped
  • 1 avocado, chopped
  • 1/2 tinned tomatoes (with added herbs)
  • 1 tsp hot sauce
  • 1 tsp chilli flakes
  • 1 tsp balsamic vinegar
  • Handful of spinach
  • Cherry tomatoes to garnish

Method

  1. Put the spaghetti in pot and add 1 pint of veg stock
  2. Bring to the boil and simmer for 10min
  3. While the spaghetti cooks, chop and lightly fry the onion until lightly browned
  4. Add the onion, chopped avocado, hot sauce and chilli flakes to a food processor and blend. Leave to the side
  5. Gently wilt the spinach
  6. Add the tinned tomatoes, balsamic vinegar to a pan and heat gently for 2min
  7. Drain the spaghetti, mix with the avocado mixture and the tomatoes mixture
  8. Top with the spinach and cherry tomatoes and serve
