
Ingredients
- Wholewheat Spaghetti
- 1 cube of vegetable stock
- 1 onion, chopped
- 1 avocado, chopped
- 1/2 tinned tomatoes (with added herbs)
- 1 tsp hot sauce
- 1 tsp chilli flakes
- 1 tsp balsamic vinegar
- Handful of spinach
- Cherry tomatoes to garnish
Method
- Put the spaghetti in pot and add 1 pint of veg stock
- Bring to the boil and simmer for 10min
- While the spaghetti cooks, chop and lightly fry the onion until lightly browned
- Add the onion, chopped avocado, hot sauce and chilli flakes to a food processor and blend. Leave to the side
- Gently wilt the spinach
- Add the tinned tomatoes, balsamic vinegar to a pan and heat gently for 2min
- Drain the spaghetti, mix with the avocado mixture and the tomatoes mixture
- Top with the spinach and cherry tomatoes and serve
