
Ingredients:
- 400g chickpeas, drained & rinsed
- 2-3 garlic gloves
- 1/2 lemon juice
- 1/4 tahini
- 1 cup cold water
- 1 tsp olive oil
- 1 tsp chilli flakes (add other spices as to your preference)
Method:
- Cook the chickpeas for 3-4 min, drain and allow to cool
- While the chickpeas cool fry the garlic lightly for 2-3min
- Once the chickpeas have cooled peel the chickpeas and throw away the skin. Leave a small handful of chickpeas to the side for garnish for later
- Add the peeled chickpeas, garlic and any spices to the food processor and pulse for 1 minute
- Add the lemon juice to the chickpea mixture and pulse again
- Add the tahini to the chickpea mixture and pulse again
- Slowly add the cool water to the humus while pulsing, until the hummus becomes fluffy and smooth
- Once the hummus is to your liking remove from the food processor and place in a container. Top with leftover chickpeas, olive oil and chilli flakes
