
Ingredients
- Tortilla Wraps
- 1/2 cup brown rice
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 1 onion, diced
- 250g black beans, drained
- 250g tinned tomatoes
- 1 tsb cajun seasoning
- 1 tsp chilli flakes
- 1 tsp hot sauce
- 1 tsp tumeric
- Handful cherry tomatoes, chopped
- Handful cheese, grated
- Handful spinach
Method
- Place the rice in a pan and add turmeric, cook for 20min and drain
- Pre-heat the oven to 180 degrees
- Lightly fry the onion until golden brown
- Place the tortilla in an oven proof dish and fill with peppers, onion, rice and black beans and wrap the tortilla tightly
- Mix the tinned tomatoes, cajun seasoning, chilli flakes and hot sauce and pour over the tortillas
- Spread the tomatoes evenly across the tortillas and top with grated cheese and tomatoes
- Bake in the oven for 20min
- Garnish with spinach and serve
