Veggie Enchiladas

Ingredients

  • Tortilla Wraps
  • 1/2 cup brown rice
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 1 onion, diced
  • 250g black beans, drained
  • 250g tinned tomatoes
  • 1 tsb cajun seasoning
  • 1 tsp chilli flakes
  • 1 tsp hot sauce
  • 1 tsp tumeric
  • Handful cherry tomatoes, chopped
  • Handful cheese, grated
  • Handful spinach

Method

  1. Place the rice in a pan and add turmeric, cook for 20min and drain
  2. Pre-heat the oven to 180 degrees
  3. Lightly fry the onion until golden brown
  4. Place the tortilla in an oven proof dish and fill with peppers, onion, rice and black beans and wrap the tortilla tightly
  5. Mix the tinned tomatoes, cajun seasoning, chilli flakes and hot sauce and pour over the tortillas
  6. Spread the tomatoes evenly across the tortillas and top with grated cheese and tomatoes
  7. Bake in the oven for 20min
  8. Garnish with spinach and serve
